Lemony Green Beans

Ingredients 

Sea salt and freshly ground black pepper 

300g green beans 

1 lemon 

1 tablespoon extra virgin olive oil 

 

Method 

  1. Put a pan of salted water over a high heat and bring to the boil. 
  2. Trim the ends of your green beans, then add to the boiling water. Cook for around 4 minutes, or until tender. 
  3. Meanwhile, zest the lemon into a large bowl using a microplane. Cut the lemon in half and squeeze in the juice from one half. Add the extra virgin olive oil, season with salt and pepper and mix well. 
  4. Drain the beans, then tip into the dressing and toss everything together, making sure all the beans get coated. Have a taste and squeeze over the remaining lemon juice if you think it needs it, then serve.
