Lemony green beans
Sea salt and freshly ground black pepper
300g green beans
1 tablespoon extra virgin olive oil
- Put a pan of salted water over a high heat and bring to the boil.
- Trim the ends of your green beans, then add to the boiling water. Cook for around 4 minutes, or until tender.
- Meanwhile, zest the lemon into a large bowl using a microplane. Cut the lemon in half and squeeze in the juice from one half. Add the extra virgin olive oil, season with salt and pepper and mix well.
- Drain the beans, then tip into the dressing and toss everything together, making sure all the beans get coated. Have a taste and squeeze over the remaining lemon juice if you think it needs it, then serve.
