Meals that use up leftover ingredients are a great way to fight food waste as well as save money. Try these three ideas to use up your leftovers:
- Pasta bake. Use leftover vegetables or that container of Bolognese in the fridge. Simply grab your pasta from the night before, pop it in a baking dish with some leftover roast vegetables, top with a sprinkling of cheese and bake until warmed through.
- A fail-safe way to use up any leftover cooked vegetables is to make a frittata. Simply combine the vegetables with eggs in an oven-proof dish and bake until the egg is cooked through. The best thing about this dish is you can use any vegetable: roast pumpkin, peas, potato, wilting greens or herbs!
- Baked potato. So many leftover meals are great served the next day atop a baked potato. Try topping a potato with leftover curry or Bolognese, add a dollop of yoghurt and you’ve got a nutritious second meal!
