Sweet Potato Toast with Avocado
1-2 sweet potatoes
1 large ripe avocado
1 punnet cherry tomatoes
½ red onion, finely chopped
2 tbsp fresh herbs (parsley, basil or mint would work well)
Cracked black pepper, to serve
- Cut ends off sweet potatoes and slice into 0.5 cm slices.
- Place sweet potato slices in toaster. Toast. Flip over and toast once more or until soft in the centre. Some toasters may require additional toasting time.
- Spread avocado onto sweet potato slices. Top with cherry tomatoes, red onion and fresh herbs.
- Season with cracked black pepper.
